A Great Christmas-Party-Menu Guarantees A Great Celebration
'Tis the season! A Christmas-party-menu is probably at the top of your list for your celebration plans.

On the other hand, your Christmas-party-menu may be the traditional kind. This may be your first, and you're not sure where to start. Either way, it's always nice to find things that are really good to eat - getting applause from your guests - and are not so difficult to prepare.

Although turkey is a typical Thanksgiving dish and not on your Christmas-party-menu, many enjoy it at this season as well. Even for an office party, the following recipe is a winner. For someone with a busy work schedule, you can't beat this one. Be sure to read the directions very carefully.
One 15-20 lb turkey 1 whole orange 2 cups boiling
Line a large roasting pan with heavy duty aluminum foil. Preheat oven to 500 degrees. Remove any turkey parts & wrappings from the inside of the turkey; rinse the turkey inside and out. Sprinkle entire bird with salt & pepper Place the turkey, breast side down, in the pan, placing the whole orange inside the turkey cavity. Pour the 2 cups of boiling water in the pan, around the turkey, not ON the turkey. Cover with 2 layers of heavy duty aluminum foil,. NOTE: It is crucial that the aluminum foil be completed sealed so that no steam escapes. When oven is heated to 500 degrees, place covered turkey in the oven. Close the door and cook for one hour. DO NOT OPEN THE OVEN DOOR. Turn the oven off. DO NOT OPEN THE OVEN DOOR. Let the oven completely cool down this usually takes several hours. Two things are important: (1)A large portion of the cooking time takes place during the cooling down time. If you open the door before its time, the turkey will not be cooked. If you are having an afternoon party, for instance, we have found that cooking it early in the morning, say 8 AM, and leaving the door closed until 2 PM is best. That will mean your oven cannot be used for other items during that time period. The bedtime hour works very well because it frees up your oven the next day for other baking. Cook from 10 PM to 11 PM, for instance, turn the oven off, go to bed. In that case, you can heat the juice to poor over the turkey the next day. Heating the turkey will dry it out. By the way, the orange adds an unusual juiciness and flavor, but oddly enough, not an orange flavor.

These meatballs are great; as appetizers or otherwise. They're perfect for a Christmas-party-menu.
Ingredients for Meatballs: 1 pound lean ground beef 1 cup fine unseasoned bread crumbs 1 egg 1/4 cup chopped onion 1 tsp garlic salt 1-1/2 tsp oregano 1-1/2 tsp basil 1-1/2 tsp parsley 1/2 tsp salt 1/2 tsp pepper. Ingredients for Sauce: One 12-oz bottle of chili sauce one 10-oz bottle grape jelly (If desired, you can substitute with frozen meatballs from the grocer, but these are particularly good with the sauce recipe we've provided.) Preheat oven to 375 degrees. Mix all meatball ingredients thoroughly in a large bowl. Form into small balls and place on cookie sheet that has been sprayed with cooking spray, or olive oil spritzer. Bake in oven until browned. These can be stored in ziploc bag in refrigerator until ready for use, or placed directly into sauce at party time. Sauce Place both the chili sauce and grape jelly in a large sauce pan and turn on medium heat. Stir until well-blended. As sauce heats up, this is easier to achieve. Do not place meatballs in sauce until it is well-blended, as they tend to break up while you're attempting to continue the blending process. Heat at least 30 minutes before serving; check to see if meatball is done before serving. When ready to serve, transfer meatballs to a chafing dish. This makes for a nice presentation, and you are able to keep the remaining meatballs warm until you need them. If your Christmas party is more informal, or if this is an office party and a chafing dish is not appropriate, use a crock pot. Just be careful not to overcook.
3 Tblsp butter or margarine, melted 3 Tblsp flour 1/2 cup milk, heated 1/4 tsp salt >br> 4 eggs 2-1/2 cups cooked carrots, mashed 1 tsp vanilla 1/2 cup sugar 1/2 tsp nutmeg Confectioners sugarIn a mixing bowl, blend the butter and flour; add the milk and remaining ingredients. Mix thoroughly. Pour into greated 1-1/2 quart baking dish. Bake at 350 degrees for 40 minutes. Cool slightly and drizzle generously with confectioner's sugar. Makes 6 servings.
Green beans with a twist - perfect for a Christmas-party-menu. This particular recipe is great with turkey because it adds more flavor than is customary for beans.
3 lbs. Green beans 5 scallions, chopped 1 cup water 1 green pepper, chopped 2 large carrots, sliced thin 2 Tblsp olive oil 2 large potatoes, sliced 3 Tblsp parsley, chopped fine 1/2 cup tomatoes, chopped 2 Tblsp butter 1/2 tsp salt 1/8 tsp pepper
Clean and cut green beans in halves; wash and drain. Place all vegetables in medium saucepan. Top with parsley. Add butter, oil, 1 cup water, salt and pepper to taste. Cover and cook on high flame until boiling point, lower flame to medium and continue cooking for 45 minutes until vegetables are tender. Serves
