Although our site focuses on music selections and making that part of your event the best it can be, it never hurts to throw out a recipe here and there. We have some good ones and when you try them, you will agree. We will update this page on a regular basis and give you additional dinner-menu recipes, so make sure to check back with us.

The recipe shown below is a favorite - It looks like a gourmet dish, tastes like a gourmet dish but is not a difficult recipe - you will find it to be a hit on your dinner-menu. It's filling so other side items are minimal.
• boneless chicken thighs or 2 bonesless chicken breasts • 1/3 cup dry white wine • 1 cup whipping cream • 2 tsp lemon juice • 1 Tblsp butter • 1 Tblsp olive oil • 1 lb chopped mushrooms • 1 jar artichokes, drained & chopped • 1/2 tsp thyme leaves • 2 Tblsp capers • All-purpose flour • Salt & pepper • Parsley • Lemon wedges • Angel hair pasta for 4
Place chicken between layers of waxed paper and pound with flat side of mallet until approximately 1/4 inch thick. Coat the chicken with flour while heating butter and olive oil in skillet over medium to high heat. Brown the chicken in skillet for approximately 1-1/2 minutes on each side; remove from skillet onto hot platter to keep warm. Add wine to pan drippings, scraping chicken residue from bottom of pan as it heats. (Cook angel hair pasta during this process.) Add lemon juice, thyme and mushrooms and continue simmering until slightly thickened. Return chicken to pan, simmer for 5 minutes. Add artichokes, capers & whipping cream and continue to simmer for add'l 2 minutes. Add salt & pepper to taste. Serve immediately over angel hair pasta. (Makes 4 servings.)

• 3 cups fresh green beans, rinsed • Boiling salted water - sufficient to cover beans • 4 Tablespoons butter
Boil the green beans for approximately 3-4 minutes, or until they are are crisp-tender. Drain the beans. Melt the butter in a medium saute pan over medium heat. Add the beans and toss for approx. 1 minute. Remove from heat. Season with salt & pepper.
A good dinner-menu should always include great bread, like this one.
• One 8-oz pkg cream cheese, softened • 1 tsp dried parsley flakes • 1 tsp dried whole basil • 1 tsp chopped chives • 1/2 tsp dillseeds • 1/8 tsp garlic powder • One 8-oz can refrigerated crescent dinner rolls • 1 egg, slightly beaten
Combine first 6 ingredients in small bowl; stir well. Set aside.Unroll crescent rolls into two rectangles. Press perforations to seal. Spread cream cheese mixture over rescent rolls to within 1/2 inch of edge. Roll, starting at long side, jellyroll fashion. Pinch edge to seal. Place on a lightly greased baking sheet. Using kitchen shears, cut 1/2-inch slices alternating from right to left side of dough, being careful not to cut completely through the dough. Pull out alternating sides, exposing jellyroll pattern. Brush wih egg. Bake at 375 degrees for 12 to 15 minutes. Makes 6 to 8 servings.

You can't lose with this tart recipe for your dinner-menu; as a matter of fact, cherry lovers that we know can't seem to get enough. The beauty of this recipe is that you can make them ahead of time and we'll warn you, you might want to make a double recipe if this is a dinner for 6. Two extra tarts just won't suffice.
• 8-oz pkg Pillsbury crescent rolls • 1 tsp butter, melted • 2 Tblsp sugar • one 3-oz pkg Philadelphia cream cheese, softened • 1/4 cup dairy sour cream • 1/2 tsp almond extract • one 21-oz can prepared cherry pie filling • 2 Tblsp sliced almonds or chopped nuts (optional)Preheat oven to 375 degrees. Separate crescent rolls into 8 triangles. Place each triangle into an ungreased muffin cup; press dough to cover bottom and sides. Brush inside of each cup with melted butter. Combine sugar, cream cheese, sour cream and almond extract; blend well. Spoon rounded teaspoon of cream cheese mixture into each cup and top with scant 1/4 cup cherry pie filling. Cover with almonds, if desired. Bake approximately 25 minutes, until golden brown. Cool 10 minutes and remove from muffin pan. Serve with whipped cream. Makes 8 tarts. (These are perfect to make ahead of time)
