This New-Years-Menu Works!

It takes a great New-Years-menu to really celebrate the right way. We've given you plenty of good music on our party page, including tunes like "The One I Got" by Jonny Lang and "Never Know" by Jack Johnson.

These are only samples of a lot of fabulous music to make the night what you want it to be. Both can be found on our New Years Eve party page.

To get the food right takes a little more work. Our recipes include:

• TURNIP GREENS SOUP
• CHICKEN CRUNCHERS
• BEST SALSA
• STUFFED MUSHROOMS
• EASY MEATBALLS
• PLUM PUDDING

You may have other specialties of your own, but this can get you started.

This first recipe is a little unusual - not what you might expect to see for this party - but don't judge it before you try it. It has never failed to please and it always surprises those who are the most skeptical. We think it is perfect for a New-Years-menu for that very reason. It is different, and it has a little kick to it. You'll get a lot of requests for this recipe.

• Two pkgs frozen turnip greens (or large 28-oz can, seasoned)
• Two pkgs dry vegetable soup mix
• Two 16-oz cans navy beans
• One pound spicy link sausage
• Creole seasoning to taste

Chop sausage into small, bite-size pieces; brown 5 minutes and drain. Cook vegetable soup mix as directed on package. Add all ingredients into large soup pot and simmer for 20 minutes. We suggest a tablespoon of the creole seasoning to begin with; increase as you desire.

• 6 boneless chicken breasts, skinned and cut into small pieces
• 1 large egg
• 1/2 cup biscuit mix
• 1/2 cup enchilada sauce
• 2 cups crushed spicy tortilla chips
• 1/4 cup minced cilantro
• 1 cup vegetable oil
• Ranch dressing
• barbeque sauce

Place each of the following in separate bowls: (1)biscuit mix, (2)egg & enchilada sauce, whisked together, (3)tortilla chip crumbs & cilantro. Dredge the chicken breasts pieces in biscuit mix, then dip in egg mixture, then dredge in tortilla crumb mixture. Cover chicken and chill 30 minutes. Pour oil into large skillet; heat to 375 degrees. Fry chicken in batches, for 3 minutes on each side or until brown. Drain on wire racks over paper towels. Serve with ranch dressing or barbeque sauce.

Appetizers are the name of the game for parties and the New-Years-menu is no exception. What you need are easy recipes and we can help. Try the stuffed mushrooms on our business dinner menu page. You'll be glad you did.

A great meatball recipe works at a New Years party. Ours is simple, right down to the sauce, and it's another "make ahead of time" item.

• 1 cup granulated sugar
• 2 cups all-purpose
• one lb. chopped dates
• 5 tsp baking powder
• Milk to make stiff batter
• 1 cup chopped walnuts
• Cool Whip

Sauce:
• 2 cups brown sugar
• 2 cups water
• 3 Tblsp butter

Combine sugar, flour and baking powder; add chopped dates and nuts. Add milk to make batter as in cake and put in a well-greased cake pan (approx. 9x9 inches). Mix sauce and boil for 5 m inutes. Pour boiling sauce over batter and bake 35 minutes at 300-325 degrees. Serve warm with Cool Whip.

We've helped you plan the menu; check back with us later for updates. Have a great party!
