Plan A Birthday-Menu With More Than Cake

When it comes to birthday-menu, there are as many varieties and ways to celebrate as there are ages. We found that simple is best.

We have tried and true recipes on this birthday-menu; they're simple and are guaranteed to please.

OUR MENU INCLUDES:

• CHICKEN VERMICELLI• TOSSED SALAD• HOT BREAD OR ROLLS
• CHOCOLATE CHIP KAHLUA CAKE



• One whole chicken
• one 16-oz pkg vermicelli
• 1 bell pepper, chopped
• 1 cup celery, chopped
• 1 large onion, chopped
• 1 can cream of mushroom soup
• 1 can cream of chicken soup
• 1 can mushrooms, drained & chopped
• 1-1/2 cups grated cheddar cheese

Cook chicken in large pot; remove from broth, de-bone and chop. Heat chicken broth to boiling and cook vermicelli until almost done; do not drain. There should be at least 1/2 inch of excess broth in vermicelli. Saute' bell pepper, celery & onion in margarine until tender. Add these ingredients and chicken to cooked vermicelli. Mix well.

Transfer mixture into one very large or two medium casserole dishes. Cover with grated cheese. Bake 1 hour at 300 degrees.

(NOTE: This recipe freezes well. If freezing, do not add cheese until just before placing in the oven.)

If you go for the homemade cakes, here is a recipe that may appeal to you. It is not the standard fare but it is always a big hit because it's chocolate. You usually think icing when you think of birthday cake, but don't worry too much about that because it is rich enough, especially if you're adding ice cream.


• 1 box butter recipe cake
• 1 box instant chocolate pudding
• 1 stick butter, softened
• 4 eggs
• 1 Tblsp water
• 1/2 cup oil
• 3 Tblsp Kahlua
• 4 tsp vanilla exract
• 1/2 pint sour cream
• 1 cup chocolate chips

Cream the butter and eggs in large mixing bowl until fluffy. Add the cake mix, pudding, water, oil, Kahlua & vanilla extract and beat on medium speed for approximately 2 minutes.

Fold in the sour cream until well blended; then fold in the chocolate chips until well blended.

Bake for one hour at 325 degrees.

(This cake is so rich, no icing is necessary; but if you prefer icing, top with your favorite.)
