Great Brunch-Menu Ideas To Get You Started

The brunch-menu is one of our favorites, both because we love the combination of breakfast and lunch or dinner foods, and because it is a departure from the normal, scheduled three meals a day. The bonus – it lasts longer. Typically, it starts at around 10 AM and lasts several hours.

Dishes include fruits, eggs, muffins, salads, quiches, meats, seafoods, baked goods, casseroles and more, and the drinks . . . coffees, teas, fruit juices and others. Sounds to us like a good excuse to plan one of these. Our menu includes:

• BREAKFAST CASSEROLE
• BANANA NUT BREAD
• STRAWBERRY-YOGURT ICEY

Stonewall Kitchen, LLC

This tradition originated in England in 1896, and the brunch-menu first appeared in the United States in the 1930s. It's the perfect way to get together informally with friends on weekends, and for those with more relaxed schedules, during the week.

Music is key to your brunch-menu as well. Check out some of our best jazz recommendations.

In keeping with the traditional brunch type menu, we would like to pass on some of our favorite tried-and-true recipes.

Following is a great casserole - the simplicity and great taste always make this a favorite.

• One 1-lb pkg bulk sausage (hot or mild)
• 1 bag frozen hashbrowns with onions & peppers
• 6 eggs, beaten
• 1/2 cup milk
• 1 tsp salt
• 1/2 tsp pepper
• 1 tsp Worchestershire sauce
• 2 cups shredded Cheddar cheese

Cook sausage until browned; drain & crumble. Remove from skillet. To drippings add the hash browns; cover and cook 15 minutes - DO NOT STIR. Mix the eggs, milk, salt & pepper & Worchestershire sauce. Pour over the hashbrowns. Add the sausage and cheese. Cover and cook for an additional 10 minutes.

Joffreys Coffee & Tea Company Ethiopian YirgacheffeA tea is another popular excuse to get together with friends outside of the normal mealtime/party event. It is a simpler event, with a smaller range of dishes to serve. These have become very popular, especially with ladies' groups, including bridal and baby shower teas.

For a basic tea, or for a brunch-menu, we have the best banana nut bread recipe EVER! This dates back to our 1966 kitchen – you will absolutely never find a better recipe. Check it out.

• 1/2 cup butter softened
• 1 cup sugar
• 2 eggs
• 1 tsp vanilla
&3149 1-1/2 cups all purpose flour
• 1 tsp baking soda
• 1/2 tsp salt
• 1/2 cup chopped pecans or walnuts
• 1 cup mashed bananas
• 1/2 cup thick sour cream or 1/4 cup buttermil

Cream the butter, sugar, eggs and vanilla with electric mixer until well blended and set aside. In separate bowl, combine the flour, soda and salt. Add the butter mixture with large wooden spoon, not a mixer. Stir in the bananas and nuts and mix well; fold in the sour cream or buttermilk, careful not to overmix.

Pour into a greased loaf pan and bake at 350 degrees for 1 hour until slightly brown on top and firm. NOTE: You want to be careful not to overbake. As a precaution, you can check at the 50 minute point by inserting a toothpick in the center. If your oven tends to bake at a faster rate, reduce baking temperature to 325 degrees.

Fabulous drinks are an important part of a brunch-menu and this one won't disappoint you. If you prefer a different type of fruit, go ahead and try it.

• 1-1/2 cup strawberries
• 1/4 cup water
• 1-1/4 cup plain yogurt
• 3 Tablespoons honey
• 10-12 ice cubes

Mix first 4 ingredients. Just before serving time, put into blender and add ice cubes. Puree and serve.
