A Graduation-Party-Menu Needs Great Food

When planning a graduation-party-menu, remember one thing. Finishing an education of any kind is quite an event and deserves a great celebration so do it up right.

If this is your first time to plan something of this nature, don't get stressed out. Prepare as much of the food as you can ahead of time, using our recipes, of course, as well as others.

Crock-Pot.com Holiday Gift Guide under $50You don’t have to serve fancy food on an occasion such as this, just lots of it. A graduation party is pretty much a lot of people mingling, congratulating the guest of honor while they eat . . . and eat . . . and eat.

Our first recipe is a meatball that we’ve used on numerous occasions and is very popular with people of all ages. You can’t go wrong with this one. Be sure to make plenty of them – they’re always popular and they run out fast.




• 5 tsp Instant beef bouillon
• ¼ cup water
• 1-1/2 lbs lean ground beef
• 1 cup soft bread crumbs
• ¾ cup finely chopped onion
• 1 egg
• one 20-oz can pineapple chunks, drained (reserve juice
• 1/3 cup lemon juice
• 3 Tblsp firmly packed light brown sugar
• 2 Tblsp soy sauce
• 1 tsp ground ginger
• 2 tblsp cornstarch
• 1 large green pepper, seeded and cut into bite-size pieces

Dissolve 2 tsp bouillon in water in small saucepan over low heat. Combine beef, bread crumbs, onion, bouillon liquid and egg in large bowl. Mix well. Shape into 18 meatballs. In large skillet, brown meatballs and pour off the fat. In separate bowl, combine ¼ cup pineapple juice, lemon juice, sugar, soy sauce, remaining bouillon and ginger. Mix well. Add to meatballs. Cover and simmer for 20-25 minutes. Combine remaining pineapple juice and cornstarch, stir into meatball mixture. Cook and stir until thickened. Add pineapple and green pepper. Heat through. (Serves six)

Maybe the guest of honor got a late start on the education, so you might want to look at some of our Oldies suggestions.

The best graduation-party-menu should contain at least two meat dishes, several dips/appetizers/finger foods and two or three different desserts. If you go with our picks, we know all of your guests, including the guest of honor, will be more than satisfied.


• One whole chicken
• 1/2 cup chopped green bell pepper
• 1/2 cup chopped onion
• 1/2 cup chopped celery
• 4 Tablspoons butter or margarine
• 2 cans chopped green chilis
• 1 can cream-of-mushroom soup
• 1 can cream-of-chicken soup
• 1 pkg corn tortillas
• 2 cups grated Cheddar cheese

Cook chicken in 3-4 quarts of water, remove chicke and de-bone. Chop the chicken and set aside. Saute' bell pepper, onion and celery in the butter - careful not to brown. To this mixture, add both soups and the green chilis and mix well - simmer, but do not cook/boil. With tongs, dip each of the corn tortillas into the soup mixture. Do not leave them in the mixture - only dip. Lay each tortilla in large rectangle casserole dish, fill with approx. 1/4 cup chopped chicken and roll it up. Arrange all the filled tortillas in the dish and cover with the soup mixture. Cover with the grated cheddar cheese and bake at 350 degrees until bubbly - approx. 30 minutes. Serve hot.

NOTE: Adding spinach as part of the filling gives this a special flavor - we recommend 2 10-oz boxes, chopped-frozen - well drained, all the juice squeezed out before adding.


Our next recipe is perfect for any party menu, not just a graduation-party-menu. It's one of those that you will want to have plenty of so that you will have a few left over for yourself for later. It's easy and you can make it ahead of time.


• One 8-oz softened
• 1 cup grated sharp cheddar cheese
• 1 small can well-drained chopped green chiles
• 1 cup well drained chopped black olives
• ½ cup chopped green onions
• garlic powder to taste
• seasoned salt to taste
• five 10-inch flour tortillas

Mix first 8 ingredients well. Spoon 2 Tblsp of mixture onto a flour tortilla, covering evenly to outer edge. Roll up and wrap in plastic wrap; chill several hours or overnight. When chilled, unwrap and slice at 1-inch intervals. Arrange on platter; serve at room temperature with salsa.
